Ingredients: For the Dough: 2 cups whole wheat flour 1/2 tsp salt Water (as required) For the Filling: 2 large boiled and mashed potatoes 1/2 tsp cumin powder 1/2 tsp coriander powder 1/2 tsp red chili powder 1/2 tsp amchur powder (dried mango powder) 1/2 tsp garam masala powder Salt (to taste) Fresh coriander leaves (finely chopped) 1/2 tsp grated ginger (optional) Oil or ghee (for cooking) Instructions: To prepare the dough, mix the flour and salt in a bowl. Add water gradually and knead the dough until it is soft and smooth. Cover the dough with a damp cloth and let it rest for 15-20 minutes. To make the filling, mix all the ingredients listed under filling in a bowl until well combined. Divide the dough into equal-sized balls. Take one ball and roll it into a small circle. Place a spoonful of filling in the center of the circle. Fold the edges of the dough over the filling to make a ball. Roll this ball gently into a flat circle, ensuring that the filling does not come out. Dust the dough with flour to prevent it from sticking. Heat a griddle or a tawa over medium heat. Place the rolled paratha on the griddle and cook for 1-2 minutes or until small bubbles appear on the surface. Flip the paratha and apply oil or ghee on the surface. Cook for another 1-2 minutes, then flip it again and apply oil or ghee on the other side. Keep flipping the paratha until it is golden brown and cooked through.
