Ingredients for our Paneer Lababdar recipe: For Paneer: 500g paneer (cottage cheese), cut into cubes 2 tbsp oil 1/2 tsp cumin seeds For Gravy: 2 tbsp butter 1/2 tsp cumin seeds 1/2 tsp coriander seeds 1 bay leaf 2 onions, finely chopped 2 green chillies, finely chopped 1 tsp ginger paste 1 tsp garlic paste 2 tomatoes, finely chopped 1/2 tsp turmeric powder 1 tsp red chilli powder 1 tsp garam masala powder Salt to taste 1/2 cup cream 1 tbsp kasuri methi (dried fenugreek leaves) Instructions: Heat the oil in a pan and add cumin seeds. When the seeds start to splutter, add the paneer cubes and sauté until they are light golden brown. Set aside. In another pan, melt the butter and add cumin seeds, coriander seeds, and bay leaf. Sauté for a few seconds. Add the finely chopped onions and green chillies and sauté until the onions turn translucent. Add ginger paste and garlic paste and cook for a minute or until the raw smell disappears. Add the finely chopped tomatoes and cook until they are soft and mushy. Add the turmeric powder, red chilli powder, garam masala powder, and salt. Mix well and cook for 2-3 minutes. Add the cream and mix well. Simmer for 2-3 minutes. Add the sautéed paneer cubes and kasuri methi. Mix well and cook for another 2-3 minutes. Garnish with coriander leaves and serve hot with naan, roti, or rice. Tips for Paneer Lababdar recipe: You can use store-bought paneer or make your own at home. If you don’t have kasuri methi, you can use fresh fenugreek leaves or skip it altogether. Adjust the amount of red chilli powder according to your taste preference. For a vegan version of this recipe, you can replace the paneer with tofu and the cream with coconut cream.
