In this blog, I will guide you through my Veg Biryani Recipe to make a delicious Veg Biryani. Ingredients: 2 cups basmati rice 3 cups water 1 cup mixed vegetables (carrots, peas, beans, potatoes, cauliflower) 1 onion, sliced 2 tomatoes, chopped 2 green chilies, chopped 1-inch ginger, chopped 4 cloves garlic, chopped 1 tsp cumin seeds 1 tsp coriander powder 1 tsp cumin powder 1 tsp garam masala powder 1/2 tsp turmeric powder 1/2 tsp red chili powder 1/4 cup fresh coriander leaves, chopped 1/4 cup fresh mint leaves, chopped 3 tbsp ghee or oil Salt to taste Instructions: Wash the basmati rice thoroughly in cold water until the water runs clear. Soak the rice in water for at least 30 minutes. Heat 2 tablespoons of ghee or oil in a large pan over medium heat. Add cumin seeds and sauté until they start to splutter. Add the sliced onions and sauté until they turn golden brown. Add ginger, garlic, green chilies, and sauté for another 2 minutes. Add the chopped tomatoes, coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well and cook for 3-4 minutes or until the tomatoes turn soft. Add the mixed vegetables and cook for 5-7 minutes or until they are cooked through. Drain the soaked rice and add it to the pan. Mix well and cook for 2-3 minutes. Add 3 cups of water and bring it to a boil. Reduce the heat to low and cover the pan with a lid. Cook for 15-20 minutes or until the rice is cooked and the water is absorbed. Turn off the heat and let it sit for 5 minutes. Fluff the rice with a fork and add fresh coriander and mint leaves. Mix well. Serve hot with raita or any other side dish of your choice. Tips for my Veg Biryani Recipe: You can add more vegetables like bell peppers, mushrooms, and zucchini to the biryani. You can also add paneer or tofu to the biryani for a protein boost.
