Chole Bhature / Chickpeas and Fried Flatbread – Quick and Easy Pancham, June 22, 2019June 22, 2019 Ingredients for Chole: 200 Grams Kabuli Channa/Chick Peas – Soaked over night1 Cup Chopped onion with 2 green chilies chopped2 Medium Sized Tomatoes1 Bay Leaf/Tez Pata1 Small Cardamom Stick/Dal Chini Stick1 tsp. Turmeric/Haldi1 tsp. Red Chilli/Lal Mirchi Powder1 tbsp Dry Mango/Amchur Powder1 tsp. Ginger-Garlic Paste1 tsp. Asafetida/HingSalt as per your taste1/2 Tsp. Cumin Seeds1/2 Tsp. of Anar Dana/Pomegranate seeds Make a powder of the Jeera (Cumin Seeds) & AnarDhana (Pomegranate seeds) and then blend 2-3 Tomatoes with it to give the tomato puree a black/brown color Ingredients for Bhature: 1 Cup Maida (All Purpose Flour)1 Cup Curd/Dahi1 Mashed boiled potato1 TBSP Sugar & Baking Soda & water syrupWater to kneadOil to Fry Method for Chole: Pre-Heat a Tawa/Griddle and Roast the Jeera (Cumin Seeds) & AnarDhana (Pomegranate seeds) and then transfer it to a blending jar with 2-3 Tomatoes and blend it into a tomato puree.Pre-Heat a Pressure Cooker and add 4 TSBP of OilAdd 1 Bay Leaf/Tez Pata & Add 1 Small Cardamom Stick/Dal Chini StickAdd 1 Cup Chopped onion with 2 green chilies choppedAdd 1 tsp. Ginger-Garlic PasteGive it a good mixAdd 1 Tsp. of Asafetida/HingAdd the Tomato Puree which you blended with Jeera (Cumin Seeds) & AnarDhana (Pomegranate Seeds)Mix it well and Add the Soaked ChickPeas/Kabuli Channa with the water in which it was soaked in.Mix them well and Add Salt as per your tasteAdd 1 Tsp. Turmeric/Haldi powder and 1 Tsp. of Red Chili/Lal Mirch Powder and 1 Tbsp. Dry Mango/Amchur PowderClose the lid and keep for 6-7 WhistlesServe it hot with Bhature Method for Bhature: In a mixing plate/bowl take 1 Cup Maida/All-purpose flourAdd 1 Cup of Dahi/curd/YogurtAdd 1 Mashed peeled boiled aloo/potatoAdd 1 tbsp. of Sugar & Baking Soda & 1 tbsp. Water in a bowl and mix it well and then pour it over the flourKnead it into a smooth doughRest the dough aside for 5-10 minsTake a deep-frying kadai/pan or a cooking pot and add Oil to deep-fryTake 1 small ball sized portion and roll and flatten it using a belan/rolling-pinDust it on both the sides with the flourFry the Bhatura/Flat-bread on both the sides for few secondsRemove it once it puffs up and is cooked on both the sides evenly.Serve it hot with the Chole.
