This traditional Indian dish combines spiced lentil soup (dal) with soft wheat flour dumplings (dhokli) for a delicious and satisfying meal. Ingredients: For the dal: 1 cup toor dal (split pigeon peas) 4 cups water 1 tsp turmeric powder 1 tsp red chili powder 1 tsp coriander powder 1 tsp cumin seeds 1 tsp mustard seeds 1 tsp garam masala 1 tbsp oil Salt to taste 1 tbsp chopped coriander leaves For the dhokli: 1 cup wheat flour 1 tsp red chili powder 1 tsp turmeric powder 1 tsp cumin seeds 1 tsp carom seeds (ajwain) 1 tbsp oil Salt to taste Water as required Instructions: First, we’ll prepare the dal. Rinse the toor dal in cold water and soak it for 20-30 minutes. In a pressure cooker, add the soaked dal along with 4 cups of water, turmeric powder, red chili powder, coriander powder, and salt. Mix well. Close the pressure cooker and cook on high flame for 2-3 whistles, or until the dal is cooked and soft. Once the pressure is released, open the cooker and mash the dal using a spoon or a potato masher. Heat oil in a pan and add cumin seeds and mustard seeds. Once they start to splutter, add the mashed dal and garam masala. Mix well and let it simmer for 5-7 minutes. Add chopped coriander leaves and keep the dal aside. Now, let’s prepare the dhokli. In a bowl, mix wheat flour, red chili powder, turmeric powder, cumin seeds, carom seeds, oil, and salt. Add water slowly and knead the dough to make a soft and smooth dough. Divide the dough into small balls and roll them into thin discs. Cut the discs into diamond or square-shaped pieces using a knife. Add the dhokli pieces to the boiling dal and let it cook on medium flame for 15-20 minutes. Stir occasionally to avoid sticking to the bottom of the pan. Once the dhokli is cooked, turn off the flame and let it rest for 5 minutes. Garnish with chopped coriander leaves and serve hot with rice or roti. Dal Dhokli is a complete meal in itself and is perfect for a quick lunch or dinner. It’s nutritious, filling, and easy to make.
