Turai ki sabzi (Ridge gourd) is loved by some and hated by many, especially by children. Its neutral taste many people find it boring, but turai is one of those vegetables that absorbs all other flavors wonderfully and makes the dish amazingly delicious. Turai ki sabzi is a very simple dish wonderfully seasoned but not too spicy and tomato adds a mellow sweetness.

  • WASH AND PEEL 250 GRAMS OF TURAI/RIDGE GOURD
  • CUT THE TURAI/RIDGE GOURD INTO SMALL PIECES
  • ADD 2 CUPS OF WATER AND SOAK THE PIECES
  • TAKE A DEEP VESSEL/KADAI AND ADD 2 TBSP OF OIL
  • ADD THE SOAKED TURAI/RIDGE GOURD PIECES
  • ADD 1 CHOPPED TAMATAR/TOMATO
  • ADD 1 TSPN HALDI/TURMERIC POWDER
  • ADD SALT AS PER YOUR TASTE
  • ADD 1 TSPN KALI MIRCH/BLACK PEPPER
  • MIX IT WELL
  • COOK IT UNDER A LID FOR 2 MINS
  • MIX IT WELL AND AGAIN COOK IT UNDER A LID TILL THE WATER SEPARATES
  • YOUR GRAVY IS READY

Now for the Tempering

  • TAKE A TEMPER VESSEL AND ADD 1 TBSP OF GHEE/CLARIFIED BUTTER
  • ADD 1 TSPN JEERA/CUMIN SEEDS
  • MIX IT WELL AND TEMPER IT ON TOP OF THE GRAVY
  • MIX IT WELL AND SERVE IT HOT WITH CHAPATI/FLATBREAD
