Summers reminds me of special pickles. Sindhi Onion Pickle-Basar Ji khatairn is one such recipe. Basar means Onion in Sindhi and khatairn means pickle. Traditional Sindhi onion pickle is mandatory in many households. It is tangy and also helps you beat the heat.

  • 8-10 SMALL ONION BULBS
  • 2 CUPS OF WATER
  • 1 TBSP OF OIL
  • 1 TSPN HALDI/TURMERIC
  • 1 TSPN OF RED CHILI/LAL MIRCH POWDER
  • SALT AS PER TASTE
  • 2 TSPN OF RAI/BLACK MUSTARD SEEDS
  • PEEL THE ONION AND SLIT THEM IN CROSS
  • TAKE SOME WATER AND WASH THEM
  • TAKE 2 TSPN RAI/BLACK MUSTARD SEEDS AND CRUSH THEM FINE
  • SPRINKLE THE CRUSHED RAI/BLACK MUSTARD SEEDS POWDER ON THE ONION BULBS
  • ADD SALT AS PER YOUR TASTE
  • ADD 1 TSPN HALDI/TURMERIC POWDER
  • ADD 1 TSPN RED CHILI/LAL MIRCH POWDER
  • ADD 2 CUPS OF WATER
  • HEAT 1 TBSP OF OIL AND COOL IT DOWN
  • TRANSFER THE ONION BULBS AND THE SPICED WATER INTO A GLASS AIR-TIGHT JAR
  • ADD THE OIL ON TO IT AND MIX IT WELL
  • SECURE THE JAR WITH A LID AND KEEP IT IN SUNLIGHT FOR 2-3 DAYS
  • AFTER 2-3 DAYS ITS READY TO BE SERVED WITH YOUR FOOD
